A long time family recipe.
Brandy, Jameson, or Rum Balls (Use which ever one you want to for this one)
12oz. Box Vanilla Wafers
12oz. Powdered Sugar
12oz. Chopped Pecans
50 grams Unsweetened Baking Cocoa Powder
1/2 Cup Light Corn Syrup
1 Cup Brandy, Jameson, or Rum
1 1 inch scoop or spoon to help form the balls with
2 or 3 (depending on size) sealable containers to lay the balls flat on to be placed in the Refrigerator.
At least an extra 12oz of Powdered Sugar placed into a separate container to cover the balls with.
Crush Vanilla Wafers in a large bowl until it looks like bread crumbs.
Chop the Pecans, food processor works great.
Mix all the ingredients, remembering to set aside the extra powdered sugar (That is why it is listed twice in the recipe), into a large mixing bowl.
Using the scoop, spoon, or your hand begin forming the balls into 1 inch balls. Place the balls in the powdered sugar until completely covered, then place on a pan or the container that will be used in the refrigerator.
Once all the balls are covered, take each one and reroll it in any remaining powdered sugar.
Store in the refrigerator for approximately 1 month, removing them once or twice to recoat in powdered sugar as needed. This allows them to gain potency and increased flavor. Store for less time if they are to strong for your tastes
If a glass jar is used they will form into a solid lump, so a flat container with 1 level of balls is recommended.
