Buta Kakuni
--- --- Simmer Sauce
18 oz Pork Belly, cut into large squares/chunks
1 tbsp Oil, Peanut | Sesame | Safflower
1 stalk Onion, spring or scallion, chopped
8 slices Ginger, fresh
2 cups Broth, Dashi (bonito broth)
--- --- Braising sauce
1/2 cup Sake (optional)
1/2 cup Broth, strained from previous step
2 tbsp Dark Soy
1 tbsp Light Soy
2 tbsp Mirin
1-2 tbsp Sugar
6 slices Ginger, fresh

Heat oil in Wok and sear the pork to brown each side 1-2 minutes
Pour in Broth, ginger and onion and bring to boil
Reduce heat to low simmer, cover and cook for 1 hour
Remove pork, pour broth through sieve.
Add pork, broth and remaining simmer sauce ingredients
Bring to boil, and reduce to simmer for 25 minutes until sauce reduces and thickens.
Serve on bed of jasmine, sprinkle toasted sesame seeds and garnish of choice (more scallions is nice).
