How do you tell the difference between a capuleer and "Damon Salvante"? You can't. There is no physical way to determine the difference.
You can, however, tell the difference based on thier behavior. A capsuleer will give you about 9 seconds of being to close to itself before it attacks you, and will typically consider you chased off when you jump from the system. Damon Salvante does not roll like that. He gives you half a second of being to close before he decides its time to completely mess your shit up. He'll empty his entire ship--thousands of angry, angry drones. When you fly away, flailing and crying, soiling yourself whilest screaming, "Jesus Christ, I'm covered in drones!" he will consider you chased off after about 6 or 7 systems away.
Whatever ship Damon may be piloting at the moment, regardless of class, size, or weaponry, should be regarded as a flying engine of nightmares and be kept at a safe distance of 15 AU. Additionally, not only will encounters with Damon Salvante kill you, but it will hurt the whole time you're dying.
