Charles Maonaigh > Hey chili is chili, it's a force multiplier for any meal or just great by itself.
(recipe taken from Cooking With Veldspar, page 17)
Materials:
- 1 lb. bacon
- 2 lb. ground beef
- 2 onions, roughly chopped
- 5 cloves garlic, minced
- 9 tbsp. chili powder
- 2 tbsp. cumin
- 1 tsp. black pepper
- 2 10oz. cans Rotel
- 2 16oz. cans chili beans
- 1 28oz. can diced tomatos
- 2 12oz. bottles dark beer
- salt and cayenne pepper, to taste
Manufacturing:
1. Cut bacon into bits, fry until brown, drain.
2. In a large pot, add 2 tbps. bacon grease and fry beef until brown.
3. Discard all but 2 tbsp. bacon grease in original pan, and sweat onions and garlic.
4. Meanwhile, combine chili powder, cumin, and black pepper. Set aside.
5. When onions and beef are done, combine everything. Do not drain cans.
6. Bring to simmer, and add salt and cayenne pepper to taste.
7. Simmer covered for 3 or more hours.
