Ingredients:
4 large eggs, preferably pasture-raised
1/2 large yellow onion, roughly chopped
6 cloves garlic
1/4 cup cashews
8 cups chicken bone broth (or vegetable broth)
2 inch piece fresh ginger, minced
2 cups shiitake mushrooms, chopped
3 tablespoons mirin
2 tablespoons toasted sesame oil
6 packages (2.8 oz) ramen noodles
3/4 cup red miso paste
1 teaspoon spicy pepper (I used S&B Ichimi Togarashi), or to taste
1 cup chopped green onion
1/3 cup dulse flakes
2 avocados, chopped up
Instructions:
1. Add the eggs to a medium saucepan and cover with water about an inch above. Bring to a boil. When the water is boiling, lower the heat to simmer and let the eggs cook for 2 1/2 minutes. Add the eggs to a bowl filled with ice and cold water (for more info on soft-boiling eggs, please see the Soft Boiled Eggs and Bacon on Cauliflower Couscous post). Peel and set aside.
2. Add the onion, garlic, cashews, and bone broth to a high speed blender. Blend on high until smooth, about 1 minute. Add to a medium saucepan, add ginger, and bring to a simmer. Turn off the heat, whisk in mirin and sesame oil and cover.
3. Pour about 1 cup broth into a medium bowl; whisk in the miso paste, until dissolved. Add to the soup, taking care not to boil (this is very important as boiling the miso will destroy its beneficial properties).
4. Add spicy pepper, to taste.
5. Cook the ramen in a large saucepan, according to package instructions (what works for me is to use a fork to separate the strands of ramen, after about 1 minute in boiling water). Make sure you salt the water as you would for pasta. Drain and rinse.
6. Separate and serve the broth immediately topped with ramen, mushrooms, green onion, dulse, avocado and eggs split in half. Top with more spicy pepper, if desired.
